De NV Brut is gemaakt van 50% Pinot Noir, 30% Chardonnay (beide 2011) en 20% Reserve (van een Soléra gestart in 2009). De verfijnde aroma’s van helder fruit migreren naar een zeer lichte en delicate eerste smaak. Deze champagne is droog (dosering: zeven gram per liter) en stevig gestructureerd, maar heel fijn en elegant, en voorzien van een goede lengte en subtiele minerale smaken.

Nathalie controleert elk aspect van haar wijn en zij was de eerste vrouw die de tittel Vigneron en Oenoloog had. Ze is tot op de dag van vandaag een van de weinige vrouwen in de Champagne die beide banen gelijktijdig uitvoert. En zij doet het met innervatie en met duizelingwekkende resultaten.

Haar wijngaarden liggen genesteld in het hart van de levendige regio Côte des Bar, waar verschillende aarde (Kimmeridiaanse mergel bedekt met Portland-kalksteen) en het klimaat (hogere temps vanwege vochtige Atlantische invloeden plus continentale invloeden) de Pinot doen rijpen waardoor haar wijnen voller van karakter worden. De Cuvee Brut bestaat uit 80% Pinot noir en 20% Chardonnay.

“Half-each Meunier and Pinot; all-2010; and matured in older casks, Falmet’s single-vineyard Brut Le Val Cornet (Disgorged May 2012) is nothing short of revelatory in its polish, transparency and complexity! (Bear in mind that, like me, you will almost certainly never have tasted a wine from within 20 or 25 miles of this one, as we’re talking about an almost entirely overlooked sector of a Champagne region, the Bar, that has only since the turn of the millennium begun to attract attention for estate-bottling.) A greenhouse-like profusion of leafing and flowering things on the nose is joined by scents of apple and red raspberry subtly shadowed by their high-toned distilled counterparts. Almost weightlessly buoyant, seductively silken and infectiously juicy in its apple and raspberry manifestations, this amazing libation simultaneously suggests hazelnut cream, almond paste and walnut oil, resulting in an uncanny counterpoint with its lively fruit acids. Crunch of berry seeds and legume sprouts lend invigoration to a chalk suffused finish in which salinity and savour of oyster liquor spell “Umami” and “Kimmeridgian” in caps, and it takes real effort to disengage the salivary glands, much less resist the next sip. I’m only guessing when I suggest that this will be worth following for at least several more years. But don’t miss out on some now! “Falmet’s NV (2008) Le Val Cornet is gorgeous. Rich, deep and powerful, yet also light on its feet, the Val Cornet shows superb depth and fabulous overall balance. Red berries, flowers, anise and spices flesh out in a broad, creamy Champagne endowed with serious structure. Chamomile, green apples, pears and dried flowers are further nuances on the finely-knit, chiseled finish. I especially admire the sense of precision here. The Val Cornet is a Pinot Noir/Meunier blend, disgorged in May 2012 and bottled with no dosage.” 92 points

The complex nose evolves with lots of elegance on notes of red fruits and spices. The mouth reveals all the texture of Pinot Noir and Pinot Meunier on a deep and vinous structure. The final is silky and mineral. 17/20 points (Coup de Coeur)
